HEALTHY DESSERT -- RED RICE BOMBS

In this recipe, we show you how to use organic Gokai Red Rice to make a delicious healthy dessert to satisfy those sugar cravings without using processed sugar.Try it out and tell us what you think.

Ingredients
  

  • 1.5 cups Gokai red rice
  • 10 cashews
  • 10 almonds
  • 1 pinch cardamom powder
  • 1 pinch salt
  • 5 tbsp ghee (clarified butter)
  • 1 cup shredded coconut
  • 1/4 tbsp dry ginger powder
  • 0.5 to 1 cup jaggery

Instructions
 

  • Soak rice in room temperature water for 3 hours, and drain.
  • Dry the soaked rice on paper towels for a minimum of 30 minutes.
  • Dry roast them on a medium flame until they become fragrant.
  • Crush the roasted rice and sieve the powder into a bowl.
  • Heat __ ghee in a pan, add the cashews and almonds, and sauté until they turn golden brown.
  • Crush them coarsely and set aside.
  • In a separate pan heat a teaspoon of ghee on low flame, and add the dry ginger powder and cardamom powder to it.
  • Allow to simmer for 30 seconds.
  • Add the jaggery and let it melt.
  • Add the crushed Gokai red rice and the coarsely ground dry fruits to the pan, and stir it until the mixture thickens to a dough-like consistency.
  • Allow to cool to a warm temperature that you can handle.
  • Using your hands, shape the mixture into small spheres or bombs.
  • Serve immediately and enjoy your healthy dessert.
