
HEALTHY DESSERT -- RED RICE BOMBS

Ingredients
- 1.5 cups Gokai red rice
- 10 cashews
- 10 almonds
- 1 pinch cardamom powder
- 1 pinch salt
- 5 tbsp ghee (clarified butter)
- 1 cup shredded coconut
- 1/4 tbsp dry ginger powder
- 0.5 to 1 cup jaggery
Instructions
- Soak rice in room temperature water for 3 hours, and drain.
- Dry the soaked rice on paper towels for a minimum of 30 minutes.
- Dry roast them on a medium flame until they become fragrant.
- Crush the roasted rice and sieve the powder into a bowl.
- Heat __ ghee in a pan, add the cashews and almonds, and sauté until they turn golden brown.
- Crush them coarsely and set aside.
- In a separate pan heat a teaspoon of ghee on low flame, and add the dry ginger powder and cardamom powder to it.
- Allow to simmer for 30 seconds.
- Add the jaggery and let it melt.
- Add the crushed Gokai red rice and the coarsely ground dry fruits to the pan, and stir it until the mixture thickens to a dough-like consistency.
- Allow to cool to a warm temperature that you can handle.
- Using your hands, shape the mixture into small spheres or bombs.
- Serve immediately and enjoy your healthy dessert.
